Ah! My New Shorter Oxford English Dictionary, 1993 edition [covers wearing out, from throwing across the table in numerous games of Scrabble], has -z- first, but then says, also -s-. I prefer the -s- to -z-, too, but that is what the venerable NSOED gives.
I looked up other words such as baptise, and the same dictionary has it as a variant of baptize.

Wouldn't this be Apostatise ( s instead of z)in Australia? Maybe?
